Preparation

• Marinate 1kg chicken pieces in 30g (2 tbsp) Knorr Spicy Marinade for 12-24 hours.
• Mix 30g (2 tbsp) Knorr Crispy Coating Mix (Seasoning for flour) in 1kg all-purpose flour.
• Sieve the flour mixture twice.
• Prepare 1L ice water.
• Heat oil in the fryer to 170°C.
• Coat the marinated chicken in the dry flour mix and then dip into ice water for 10 seconds.
• Coat the chicken again in the dry flour mix.
• Deep-fry chicken until golden brown.
• Adjust Knorr Professional Spicy Marinade as desired.

Yield

Makes 33KG meat.

Tips

To keep the fried chicken crispy for a long time, keep every piece on a rack with little distance from each other. Add crushed chilli in marinade to make your chicken spicier.
