Prepare the Pickled Red Onions:

  • Red onion, julienne 300.0 g
  • Cabbage julienne 200.0 g
  • Sugar 30.0 g
  • Salt, kosher 30.0 g
  • Apple cider vinegar 500.0 g

Prepare the Burger:

  • Pepper jack cheese, slices 10.0 pc
  • Pickled Red Onion, prepared 500.0 g
  • Cilantro 250.0 g
  • Hamburger buns, toasted 10.0 pc
  • Gochujang Mayonnaise 400.0 g
  • Lamb, patties 10.0 pc
  • Beef, patties 10.0 pc

Preparation

  1. Gochujang Mayonnaise;

    • Combine Hellmann’s Real Mayonnaise with Gochujang paste.
  2. Prepare the Pickled Red Onions:

    • Bring all ingredients except the onions and cabbage to a boil.
    • Remove from heat and add vegetables.
    • Allow to cool at room temperature, strain and chill.
  3. Prepare the Burger:

    • Season and cook patties to desired temperature.
    • Spread Gochujang Mayonnaise on buns.
    • Build the burger with remaining ingredients.
